Summer is the perfect time for a colorful coleslaw. It's a great addition to almost anything or by itself. We like to add it to pulled pork tacos. 

This easy recipe can be made in about 15 minutes - and it’s a big batch - serving 10-12.

Colorful cabbage

1/2 head of green cabbage, sliced thin 

1/2 head of purple cabbage, sliced thin 

3 mini sweet peppers using 2 different colors, sliced thin 

2 whole carrots shredded 

1/2 cup mayonnaise 

1/2 cup whole milk

1 tbsp. sugar

1 tsp. white vinegar 

salt to taste 

A dash of hot sauce 

1 cup fresh cilantro

Combine the green cabbage, purple cabbage, sweet peppers and carrots in a bowl. 

In another bowl, mix the mayonnaise, milk, sugar, vinegar, salt and hot sauce. Pour over cabbage. Toss to combine well. Add cilantro and cover and refrigerate at least two hours before serving.
