In the kitchen with Lori Lesley

There is nothing better than a chocolate cupcake! I got this recipe from a wonderful friend who loves all things chocolate.
These were always a staple at her home. This one is extra special because it has a peanut butter buttercream frosting and a Reese's candy on top. Great for school parties or afternoon snack.

1 1/3 cups of all- purpose flour
1/4 t. baking soda
2 t. baking powder
3/4 cup of cocoa powder
pinch of salt
3 Tbsp. of butter, softened
1 1/2 cups of sugar
2 eggs
3/4 t. vanilla
1 cup milk
Preheat oven to 350 degrees. Line muffin pan with liners. Sift together flour, baking powder, baking soda, cocoa and salt. Set aside
In a large bowl, cream together butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
Bake for 15-17 minutes. Cool and frost.
Peanut Butter Cream Frosting
2/3 cup creamy peanut butter
1 stick of butter, softened
3-4 cups of confectioners sugar
Cream butter and peanut butter. Add confectioners sugar. If too thick in texture add a teaspoon of milk.
Cut a Reese' peanut butter cup in half and place on top in frosting.
