Black bean and corn salad

This is the perfect salad for summer. Enjoy!

1/3 cup fresh lime juice

1/2 cup olive oil

1 clove garlic, minced

1 teaspoon salt

1/8 teaspoon cayenne pepper

2 cans black beans, drained

1 1/2 cups frozen corn

1 avocado pitted and diced

1 red bell pepper, finely chopped

2 tomatoes, chopped

3 green onions, thinly sliced

1/2 cup fresh chopped cilantro 

Place olive oil, garlic, lime juice, salt and cayenne pepper in a jar with lid and shake until well blended. 

Place black beans, corn, avocado, bell pepper, tomatoes, onions and cilantro in a large bowl. Pour dressing over and mix well.
