Cowboy quiche
1 unbaked pie crust
2 whole yellow onions, sliced
2 Tbsp. butter
8 slices of bacon
8 large eggs
1 1/2 cup heavy cream
Salt and pepper to taste
2 cups a if shredded sharp cheddar cheese
Fry onions in the butter over medium-low heat for 15 minutes, stirring occasionally until they are golden brown. Set aside and cool.
Fry bacon and chop into large bite-sized pieces
Preheat oven to 400 degrees. Roll out the pie crust and press it into a large deep dish pie pan. Whip the eggs, cream, salt and pepper in a large bowl. Then mix in the onions, bacon and cheese.
Pour the mixture into the pie crust. Place the pan in a baking sheet and cover lightly with foil. Bake 40-45 minutes then uncover and bake 10-15 more minutes until crust is golden brown. Let stand for 15 minutes before cutting.
This quiche goes wonderfully with fresh fruit.
