Pecan Toffee Tassies

In the mood to do a little holiday cooking? This recipe is perfect for those with a sweet tooth. Enjoy!

1 cup finely chopped pecans

1 tsp vanilla

2 large eggs

2 Tbsp flour

1 cup firmly packed brown sugar

1/2 stick butter, melted

1 package refrigerated pie crusts

1 10-oz package of almond brickle chips

Unroll pie crusts and cut out 48 circles using a 1 3/4 inch round cookie cutter. Place in mini muffin pan, pressing on bottom and up the sides of each mini muffin cup. Combine melted butter, sugar, flour, and eggs in a large bowl, mixing well. Add vanilla. Stir in pecans and brickle chips. Spoon pecan filling evenly into pie shells.

Bake for 25 minutes or until filling is set. Cool in pans on wire racks.
