With Thanksgiving Day right around the corner it's time to start thinking of which sides you want to serve. These loaded mashed potatoes were my mom’s favorite and are a delicious alternative to the same old boring mashed potatoes.
They can be made up ahead of time and kept in refrigerator. That is a major plus in my book!
Loaded mashed potatoes
5 pounds of potatoes, peeled and cubed
3/4 cup sour cream
1/2 cup milk
3 Tbsp. butter
Salt and pepper to taste
3 cups shredded cheddar cheese blend, divided
1/2 pound sliced bacon, cooked and crumbled
3 green onions, sliced
Place potatoes in Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-15 minutes or until tender. Drain and place in large bowl. Add the sour cream, milk, butter, salt and pepper. Beat on medium speed until light and fluffy. Stir in 2 cups of cheese, bacon and onions.
Transfer to a greased 3 quart baking dish. Top with remaining cheese. Bake uncovered at 350 degrees for 30 minutes.
