Sweet potato pie
This is the perfect recipe for your Thanksgiving table. Enjoy!
2 pounds sweet potatoes
3/4 cup firmly packed brown sugar
3/4 cup half and half
1/4 butter, melted
3 large eggs
2 Tbsp. flour
3/4 tsp. cinnamon
3/4 tsp. vanilla
1/4 tsp. All spice
1/4 tsp salt
Pre-heat oven to 350 degrees. Bake sweet potatoes for one hour or until tender. Set aside and cool.
Cut potatoes lengthwise and scoop out into large bowl; mash with a fork. Whisk in brown sugar and next 8 ingredients until smooth.
Place pie crust into 9-inch pie plate. Pour potato mixture into crust. Bake 45 minutes or until golden brown and center is set. Let cool completely on a wire rack. Garnish with whipped cream. Cover and refrigerate for up to 3 days.
