Joy's Pumpkin Bread

Ingredients:

5 eggs

1 1/4 cup vegetable oil

1 can pumpkin (15 oz.)

2 cups sugar

2 cups flour

1 pkg. Instant vanilla pudding (small box)

1 tsp. baking soda

1 1/2 tsp. cinnamon

1/2 tsp. salt

1 tsp. vanilla

Directions:

In bowl, beat eggs. Add oil, sugar and pumpkin and beat until smooth. Combine remaining ingredients, add gradually to pumpkin mixture. Bake at 325 degree.

Pour batter into loaf pans five mini/small - 50-55 minutes

3 medium size loaf pans - 70 minutes or

2 normal size loaf pans - 75-80 minutes

Ingredients:

4 cups milk

1 cup butter

2 tbsp sugar

1 tsp salt

3 cups yellow cornmeal

Directions:

Preheat oven to 350. In large saucepan, bring milk to a boil and add butter, stirring until it melts. Add sugar, salt and cornmeal. Simmer for 5 minutes. Drop by teaspoonfuls onto greased cookie sheet and bake for 10 minutes or until golden.
